Fishpond

Growing high-quality barramundi requires a careful mix of saltwater, freshwater, and brackish water to achieve exceptional taste. Maintaining water quality, including temperature and salinity, is crucial for the fish's health. Providing fish with an optimal environment promotes growth, vibrant coloration, and a natural flavor free from any undesirable muddy taste.

Our fish farming begins with 10-gram fry and continues until the fish exceed 5 kilograms, over an approximately 18-month period. We ensure strict adherence to international standards, hygiene practices, and environmental conservation during this time.

Furthermore, we utilize the traditional Japanese technique—IKEJIME—an important process that determines the lasting freshness, superior taste, and unmatched quality of giant barramundi.

Fish Processing

Processing: Scaling, Cleaning, and Filleting

At Khaopong Farm, we adhere to international standards of Good Hygiene Practices (GHPs) and Hazard Analysis and Critical Control Points (HACCP) in our fish processing facility. Notably, we handle specific fish parts with precision, ensuring uniform sizing according to customer requirements. Our dedication to quality means our fish is completely free of additives—no phosphates, no glazing, and no other chemicals used for bulking.

Consequently, Khaopong Farm's fish meat retains its shape during cooking, avoiding water loss and undesirable mushy texture. Culinary preparation minimally affects the fish meat's weight, preserving its inherent, superior flavor for an elevated dining experience.

Blast Freezing

We also offer freezing and storage services for seafood products, featuring a 'Blast Freezer' that rapidly freezes fresh fish at temperatures ranging from -30°C to -35°C.

This advanced freezing process reduces 'drippings,' thereby mitigating the risk of nutritional loss, flavor deterioration, and texture changes commonly associated with traditional freezing methods.

Furthermore, our fully equipped frozen storage facility ensures the long-term preservation of products by maintaining a temperature below -18°C to uphold both quality and freshness.

Temperature-Controlled Transportation

Khaopong Farm owns refrigerated transport vehicles capable of maintaining temperatures as low as -18°C. Regular hygiene inspections and safety audits are carried out on these vehicles to ensure that fresh fish is always delivered 'on time'.
